A History of Chocolate. by Michael Haydon

I find the best way to consider the history of chocolate is to actually eat some while I'm reading! We can thank the Mayan Indians for discovering and planting the first cocoa plants in 1500 BC, when the Olmec Indians began to grow them. They used to dry out the beans and then grind it up and use as the base of a watery drink just like we do with tea or coffee today. This was such a delicacy that only the social elite were able to afford such luxury by the time of the Mayans. When Columbus first began to explore the new world he was introduced to the coco bean as cargo a Mayan trader was carrying.

Europeans Invent the First Chocolate Drink

Cacao beans were not very popular after Columbus brought back the first supplies. In fact it took some laterally minded monks to try the drink as a hot beverage. This immediately became popular throughout Spain. Soon Chocolate Houses opened throughout Europe. In the 1700's the first steam mechanized coco grinders which lead to a price drop in coco production that made chocolate available for all.

At Last - Solid Eating Chocolate

As the hot drink spread as a favorite drink, people became more adventurous and experimented with using the cacao beans differently. Soon the powder was being used in cakes and desserts. It became obvious that the combination with sugar was a vital developmental step. Around the time of the American Revolutionary War, Bakers Chocolate Company began large scale manufacturing.

The Chocolate Revolution Begins

Whilst the Bakers Chocolate Company was influential in North America, the Dutch were quickly moving to widespread use of Cocoa powder produced by a process named after the country, the "Dutching" method. This process produced a fine grained powder which is still a favorite with chocolate connoisseurs.

Chocolate Spreads its Wings

Soon chocolate began to be used to make candies of varyoing types. The "Dutched" method lent itself to multiple uses and when combined with cocoa butter the modern chocolate styles began to emerge. This was especially evident with the production of moldable treats which we call chocolate truffles.

The history of chocolate in America features a rich diversity of baked goods and candies. One of the baked goods beloved by Americans are brownies, the first published recipe for this now classic treat was published in the Sears Roebuck Catalogue back at the end of the 19th century. The Hershey Company and the Nestle Company were making so much money in the United States, that a Belgian confection maker opened Godiva Chocolate Company in 1926; all three companies are still popular chocolate manufacturers today.

The main ingredients found in beer are water, malted barley, hops, and yeast. There are other ingredients such as flavoring, sugar, and other ingredients that are commonly used. Starches are used as well, as they convert in the mashing process to easily fermentable sugars that will help to increase the alcohol content of beer while adding body and flavor.
Water
Seeing as how beer is mainly composed of water, the source of water and its characteristics have a very important effect on the character of the beer. A lot of beer styles were influenced by the characteristics of water in the region. Although the effect of minerals in brewing water is complex, hard water is more suited to dark styles, while soft ware is more suited to light styles.
Malt
Among malts, barley is the most widely used due to its high amylase content, and a digestive enzyme that facilitates the breakdown of starch into sugars. Depending on what can be cultivated locally, other malts and unmalted grains can be used, such as wheat, rice, oats, and rye.
Malt is obtained by soaking grain in water, allowing it to germinate, then drying the germinated grain in a kiln. By malting the grain, enzymes will eventually convert the starches in the grain into fermentable sugars.
Hops
Since the seventeenth century, hops have been commonly used as a bittering agent in beer. Hops help to contribute a bitterness that will balance the sweetness of the malts. They also contribute aromas which range from citrus to herbal.
Hops also provide an antibiotic effect that favors the activity of brewer's yeast over the less desirable microorganisms. The bitterness in beer is normally measured on the International Bitterness Units scale.
Yeast
Yeast is a microorganism that's responsible for fermentation. Specific strains of yeast are chosen depending on the type of beer produced, as the two main strains are ale yeast and lager yeast, with other variations available as well.
Yeast helps to metabolise the sugars that are extracted from the grains, and produces alcohol and carbon dioxide as a result. Before the functions of yeast were understood, all fermentations were done using wild or airborne yeasts.
Clarifying agent
A lot of brewers prefer to add one or more clarifying agents to beer that aren't required to be published as ingredients. Examples include Isinglas finings, which are obtained from swim bladders of fish and Irish moss, which is a type of red alga.

The history of tea is full of legends and colorful historical events. The Chinese are thought to be the first discoverers. In fact, it was one man, a scientist and emperor of China, Shen Nung, that is thought to first discover tea as a drink. It is said that he had a requirement that his water be boiled before drinking, all for sanitary reasons. However, during one such boiling of water, it was near a bush with dried leaves, and some had fallen into the water, creating a brownish liquid. This prompted Shen Nung to try the tea and enjoyed its taste.
Later, in seclusion a man named Lu Yu had concocted a variety of different preparation and cultivation methods of tea in China. This would later carry into imperial Japan for use by missionaries. Japan's Father of Tea, Yeisei, a Buddhist priest brought tea seeds to Japan for the first time. It was useful, in China as a religious meditation method and he wanted to introduce it to the Japanese.
Eventually, in the history of tea, the drink becomes popular throughout the world. After Japan, Europe was the next to discover tea as a drink. The Portuguese were the first to seek and obtain trade with China for tea. Later Baltic countries, Holland, and France were receiving imports of Chinese tea as well.
In 1650 tea reached America. When the Dutch settled to America, a man by the name of Peter Stuyvesant was the first to bring tea. In fact, in America, more people drank tea than any other country, including Europe.
England was the last one of nations to discover tea. Somewhere in the middle of the 1600's England received its first shipment of tea. Now, thanks to the extreme popularity, tea is Englands national drink, which used to be ale.
Tea plays an important role throughout history, particular in America, which is shown bluntly in the Boston Tea Party. Additionally, it has become a staple of many countries, even more so than coffee, which is consumed by millions of people each day. The history of tea is a long and interesting one. It moves throughout the world, all the result of one scientist who happened upon it by complete accident.
So you see, tea isn't just an interesting drink, it comes steeped in important history and has been at the forefront of many dates in the timeline of man. Most importantly, tea is a healthy drink that can help boost your immune system as well as provide you with nourishment.
